This is not a food blog but here is a Vegetable Fritter Recipe
When I first thought about starting a blog it was going to be mainly about my love of food and cooking but for at least two reasons I don't think that it will be as specific as that. Firstly there are so many great food and recipe blogs out there I don't think that mine would be that riveting or will add anything to cyberspace.
Secondly there are alot of other things that I would like to talk about.
Having said that last night I did cook some really delicious vegetable fritters and thought I would share the recipe with you.
Vegetable Fritters
1 medium zuchini coarsley grated
1 medium carrot coarsley grated
1 large potato coarsely grated
1 small onion grated
1/4 cup dry breadcrumbs
1/4 cup self-raising flour
1/4 cup pamesan cheese
1 (large) pinch ground nutmeg
1-2 eggs beaten
1. Squeeze zuchini, onion and potato in a clean tea towel (or paper towel) to remove as much moisture as possible.
2. Place vegetables in a bowl with breadcrumbs, flour, parmesan and nutmeg. Stir in egg (I found that because my carrot and zuchini were on the large side I needed one and half eggs). Season with salt and pepper.
3. Heat 1cm of oil in a frying pan over moderate heat. Spoon mixture into mounds, flatten slightly and fry 2 minutes on each side or until browned.
4. Drain fritters on paper towels. Sprinkle with sea salt and serve.
The mixture made 8 decent sized fritters. I served them with grilled lamb cutlets and it was delicious. So delicious we don't have a photo - we just couldn't wait to eat them. I'm sure I will make them again soon and will post a photo then.
